Easy to make flapjacks with fresh banana slices inside. Sweet, airy, tender, with a crispy crust on the edges - simply delicious! Perfect for a family breakfast.
Prepare and measure all ingredients in advance.
In a bowl or blender, combine soft cottage cheese and sour cream. Add 1 tablespoon honey and a pinch of salt.
In a separate bowl, whisk 2 chicken eggs until frothy, then pour over the sour cream and cottage cheese mixture. Again, mix well.
Mix the flour and baking powder together and gradually add to the main mixture, beating constantly with a whisk.
Peel and chop the banana. Dust each piece with a little flour.
Take a frying pan, add some vegetable oil and put it on medium heat. Wait until the pan is hot. Then pour a little batter (about 1 tablespoon for each flapjack). Place a slice of banana on top of the liquid batter and pour a little more batter (to cover the banana).
Fry the flapjacks for about 2 minutes on each side until golden.
While the flapjacks are frying, make the syrup to serve. In a separate saucepan, combine the honey and freshly squeezed lemon juice. Heat over medium heat for 2 minutes.
Serve the banana flapjacks immediately (hot) and drizzle with the honey-lemon syrup. Enjoy!
