The perfect recipe for French toast on milk bread with cherries and ricotta cheese that's sure to get it right the first time! Crispy on the outside and soft on the inside, this toast is a great way to treat yourself on a Sunday morning.

It's best to use Japanese Hokkaido bread or a brioche bun. They make the most delicious toast. If you don't have these on hand, just use regular toast bread. I added heavy coconut cream to the bread soaking mix - it gives the toast a special flavor. If you don't have it, replace it with heavy cream and add cinnamon or nutmeg for flavor.

For the topping, I used brackish ricotta and sweet cherries - turns out they go great together! Instead of ricotta, you could use creamy cottage cheese or camembert (it's delicious with it, too).

  1. Place the cherries in a saucepan. Add the sugar and cook over low heat until the sugar melts. I used frozen cherries, so in my case you have to wait until the cherries are completely defrosted.

  2. In a separate bowl, mix the cornstarch with cold water and stir until smooth. Add to the cherries in the saucepan and mix well. Then increase the heat to medium and cook, stirring constantly, until the mixture thickens. Remove the saucepan from heat and allow to cool.

  3. In a bowl, beat the egg, add the coconut cream, milk, sugar and a pinch of salt. Mix well.

  4. Cut off the crusts on all sides of the bread slices.

  5. Place the first slice of bread in a deep container. Pour some of the egg mixture over it and spread evenly to soak. Place the next slice on top and repeat. Do the same with the last (third) slice.

    Then tilt the container in different directions to dip the sides of the bread in the mixture. Be careful to keep the shape of the toast.

  6. Melt the butter in a skillet over low heat. Carefully place the toast in the pan and cover with a lid. Cook until golden brown, about 3 to 3.5 minutes. Remove the lid, flip the toast, and place under the lid again for 3 to 3.5 minutes.

  7. Then remove the lid and begin toasting the toast on the sides. Turn the toast over and toast all four sides alternately, about 1-1.5 minutes for each side. Gently hold the toast with the spatula and push down on the toast occasionally (as shown in the video) to create an even shape.

  8. Place the toast on a plate and cut in half (easier to eat). Using a cooking bag, squeeze out the ricotta cheese.

  9. Top with the cherries and drizzle with the syrup. Serve immediately. Enjoy!
