Matcha panna cotta is a light and tender dessert with a subtle green tea flavor. It's the perfect combination of creamy panna cotta and matcha's pleasant bitterness. Give it a try! It's ideal for an afternoon tea party or a festive dinner. Besides, the recipe is very simple, and the result will definitely impress you and your guests! Just pay special attention to the choice of matcha: use a quality powder (ceremonial grade) to make the flavor bright and rich.
Soak the gelatin in cold water, mix well, and let it swell for 10-15 minutes.
Sift the matcha through a fine sieve into a heavy-bottomed saucepan, then add the sugar, whole milk, and cream. Give it a good stir and put it on the heat (just above medium). You'll need to heat the liquid, but don't let it boil. As soon as you see bubbles forming, turn off the heat.
Next, add the gelatin that you've soaked to the heated liquid and stir until it dissolves completely.
Pour the resulting mixture into the molds through a sieve. If there are any bubbles on the surface, use a spoon to remove them. Put the molds in the fridge for about two hours.
After two hours, the dessert will have set and the panna cotta will be ready to eat! You can eat it with a spoon right out of the mold, or you can take it out. Next, I'll show you how to carefully take the dessert from the molds.
To get the panna cotta out of the mold, boil water in a pot (make sure it's bigger than the mold), then turn the heat down and gently lower the mold with the dessert into the water for 3-5 seconds (like in the video).
Once that's done, cover the mold with a serving plate, flip it over, give it a little shake, and lift the mold. The dessert should easily come out onto the plate.
Top the panna cotta with a little matcha tea and fresh berries (strawberries and raspberries are great, I highly recommend to add them). Enjoy!
