A simple recipe for apple puffs in the shape of ..... apple! I will tell and show you how to make beautifully shaped puffs that you can make for your children or guests. Although the process seems complicated, it's actually quite easy (I got it right the first time!). In any case, you can skip the steps of shaping the puffs and just make them round or rectangular. It won't make them any less delicious!
Note: I used ready-made frozen puff pastry (1 sheet of about 200 grams), which I thawed beforehand. Take this into account when planning your cooking time. And for the filling, choose the sweetest and firmest apples, because the final flavor of the pastry depends on them.
Roll out the dough sheet to about a quarter of an inch thick. Then use a large diameter glass or metal mold to cut out circles (I had 4 circles on each sheet of dough). Keep the dough scraps, you will need them later.
Next, take a glass with a smaller diameter and make the sides of each circle (press the dough, but do not press it all the way through).
Use the leftover dough to make little leaves for our apples. Roll the rest of the dough into a roll and cut it into small pieces (about 4-5 pieces). Shape each piece of dough into a leaf as shown in the photo: pull out a little bit of dough, round the bottom, make a shallow vertical cut and 3-4 diagonal cuts.
Cut out a small part of the edge of the dough circles in the shape of a triangle as shown in the photo (this will be the bottom hole of the apple).
Attach the leaves to the top of the dough circles to make them look like real apples.
Now move on to the filling. Cut the apple into 4 pieces and remove the core. Separately, mix the sugar and cinnamon (you can also add a pinch of any spice you like, such as nutmeg or cloves).
Next, take a paring knife (if you have a grater or vegetable slicer, feel free to use it) and cut each part of the apple into slices. If you don't have either of these, just carefully slice with a knife. It is important not to cut too thin, otherwise the slices may burn during baking.
Begin assembling the puffs. Start by placing a half teaspoon of honey in the center of the dough circle and spread evenly to the sides. Repeat with all the dough circles.
Now lay out the apple slices nicely. Take the two largest apple slices and place them on the dough with a small gap in the middle. Next, take some smaller slices and place a ladder on top of the previous ones. And so on (I used 8-10 apple slices for each circle of dough). Some of the slices may need to be trimmed in the middle to make them fit. The last 1-2 slices should be almost vertical.
Tip: pre-assemble each «ladder» of apples on a plate and then place them on the dough one at a time.
Sprinkle the apples with the sugar and cinnamon mixture and brush the sides and top with egg yolk.
Bake in a preheated oven at 355°F (180°C) for 14-17 minutes. Serve immediately. Bon appetit!
