A simple recipe for soft, golden rolls filled with pesto sauce and gooey mozzarella cheese. Great with soup or as an appetizer on their own. Served straight from the oven and topped with flavorful butter, they are sure to impress your family or guests!
When cooking, it's important not to overdo the pesto so that the buns don't get too moist inside. It's best to use freshly made homemade pesto, but store-bought will work, too (that's what I used). As for cheese, it's best to use mozzarella - it stretches perfectly, which gives the rolls an incredible texture. But no one's stopping you from trying other soft cheeses!
In a large bowl, mix together the warm milk (warm it up a bit on the stove or in the microwave), instant yeast, sugar, egg and sunflower oil. Then add the flour and salt and knead the dough with a spatula. Cover with clingfilm and leave to rest at room temperature for 1 hour.
After 1 hour, knead the dough a little more again with a spatula to remove air from it.
Now transfer the dough to a work surface sprinkled with flour. Roll the dough a little in the flour and divide it into 8-10 equal parts.
Roll each part of the dough into a ball. Cover with clingfilm and let rise for 15 minutes.
When the dough has risen a little, start filling it. First, use your hands to knead each ball of dough into a small flatbread.
Place 1 teaspoon of pesto sauce and 1-2 mozzarella balls on the flatbread (I had a small size mozzarella, so I put 2 balls at a time).
Then pinch the edges of the dough to get the filling inside. Repeat it with all the balls.
Place all the filled balls in a baking dish lined with parchment paper. Cover with plastic wrap and let rise for another 15-30 minutes.
After 15-30 minutes, place the rolls in a preheated oven at 350°F (175°C) and bake for 15 minutes. Then open the oven, cover with foil and bake for another 5-7 minutes.
The finished buns should be buttered immediately while they are still hot. To do this, mix the melted butter with the finely chopped garlic (1 clove) and half a teaspoon of Italian herb seasoning.
Serve immediately (this is when the buns are at their most flavorful)! You can store buns for a few days, but be sure to reheat them in the oven or microwave before serving. Bon appetit!
