Cooking soft sweet pumpkin buns in the oven. It's a great seasonal treat: simple, delicious, airy and flavorful! They are perfect as toast for breakfast or as an appetizer for a fall dinner.
Important: the amount of sugar depends on the type of pumpkin. The sweeter the pumpkin, the less sugar you need to add (the amount varies from about 5-8 tsp or 30-50 grams). Add the sugar gradually and taste the pumpkin puree as it cooks to find the right amount.
The amount of flour needed also depends on the type of pumpkin (the more watery the pumpkin, the more flour is needed). Add the flour gradually, from 170 to 190 grams (1.5 cups). The dough should not be runny.
Peel the pumpkin from the seeds and rind and cut it into small cubes.
Put the pumpkin pieces in a bowl, then place them in the microwave, cover and bake for 5-7 minutes. The pumpkin should eventually become soft, but not dry (stop the microwave periodically and check for doneness). The baking time will vary depending on the size of the pieces, the type of pumpkin, and the power of the microwave (I use about 800-1000 W).
Transfer the cooked pumpkin to a bowl or blender jug. Add the egg, sugar and zest of one orange. Blend until smooth.
Add the baking powder to the flour, then sift it through a sieve into the pumpkin puree. Gradually add the flour until you get the right consistency, stirring occasionally with a spatula.
The result should be a small ball of slightly moist and sticky dough.
Place the dough on a floured surface and divide into 6-8 equal pieces. Grease your hands with a little vegetable oil and roll each piece of dough into a ball.
Put the dough balls on a parchment-lined baking sheet and flatten them, making a small indentation in the center. Top each indentation with half a peeled walnut.
Bake in a preheated oven at 180°C (355°F) for 12-15 minutes.
Pumpkin buns are ready! Serve them warm with butter, your favorite syrup or jam. Store them at room temperature. When serving again, you can reheat them in the microwave for 10 seconds.
